"summary": "Once the homemade papad and kachri made for the year run out after Holi, many people fall back on costly, often adulterated store bought namkeen. Phulan Devi of Bahraich shares a simple home formula to turn leftover rice and potatoes into crunchy kachri and papad right at home.",
"content": "As soon as Holi passes, the year's stock of papad and kachri stored in most homes slowly starts to run out. After that, whenever people want something crunchy with their tea or need to put a snack in front of unexpected guests, they tend to rely on expensive and often adulterated namkeen from the market. But there is a homemade way to avoid all that trouble, and it uses something that gets left over in your kitchen every single day: rice.\n\nLeftover Kitchen Rice Can Become Crispy Kachri\nWhen food is cooked daily at home, a little rice almost always gets left behind, and it is often simply thrown away. That very leftover rice can be turned into crispy, tasty kachri just like the kind you buy in the market. In other words, kitchen waste gets put to use and there is no need to bring in store bought namkeen.\n\nWho Is Phulan Devi\nThis easy household formula has been shared by Phulan Devi, a resident of the small village of Siswara in the Nanpara area of Bahraich district. There was a shortage of money at home and no work to do either. That is when she thought of doing something that would let her work from home and also earn a little. With that intention, she joined the Ganesh Prerna group, tried her luck, and began making papad from potatoes and rice. Today she makes the papad at home and sells it from home as well.\n\nHow to Make Potato Papad\nAccording to Phulan Devi, all of this can be made comfortably at home too. To make potato papad, first take large potatoes and boil them well. Once boiled, let the potatoes cool and then grind them finely on a mixer or a grinding stone. After that, mix in red chilli, salt and other spices as needed, shape the mixture, place it on transparent polythene and dry it in the sun. After two to four days of continuous strong sunlight, they dry out properly and become ready to eat once fried. This is how potato papad can be made easily.\n\nThe Full Method for Rice Kachri\nFor rice kachri, if there is rice left over at home, you can make it from that. And if you want to prepare a larger batch, cook the rice in a pot or pressure cooker with extra water so that it turns soft and moist.\n\nTo make kachri from leftover rice, first add a little water to it to make it wet. Then grind it well. After grinding, you can mix in some spices if you like, or keep it plain. Next, using a sieve or a piping cone made from cloth, pipe it out in a shape like jalebi and dry it in the sun. Once dried, the kachri is ready, and when you fry and eat it, it tastes absolutely delicious.\n\nWhat this means for you\nWhat this means for you:\n\n• Across India: By turning daily leftover rice and potatoes into homemade kachri and papad, you can cut spending on costly, often adulterated store bought namkeen and reduce kitchen waste at the same time.\n• In Bahraich: Joining a self help group to make and sell papad and kachri from home, as Phulan Devi did, can become an easy source of income.\n\nQuestions & Answers\n\n1.
