Street food enthusiasts visiting the Phusro area in Bokaro district are increasingly flocking to a local joint named Maa Jagdamba Chaat Centre. The stall has made a distinct reputation for its signature offering called Bahubali Chaat, which stands out due to its substantial serving portion and a combination of nearly 75 individual ingredients. The generous quantity paired with a multi-layered profile of flavours has turned the stall into a prominent food destination for visitors from across the town and neighboring localities.
Fifteen Years of Experience Leading to a Jumbo Creation
The establishment is managed by stall vendor Vicky Gupta, who brings 15 years of operational experience to the business. Having served standard street snacks for well over a decade, Gupta wanted to introduce an innovation that went beyond conventional platters. His goal was to serve a dish that completely satisfies an appetite in a single order while leaving a memorable impression on the palate. That reasoning led to the development of this oversized preparation, which quickly eclipsed the other traditional chaat varieties available on his menu in terms of popularity.
Layering Process and Rich Ingredient Profile
Assembling the Bahubali Chaat follows a structured method starting with an extra-large puffed puri. The shell is cracked open by hand to create a wide cavity, which is then filled with fried aloo tikiya, crispy papdi, savoury mixture, crunchy peanuts, and sev. To build complexity, Gupta seasons the dish with 5 distinct dry spice blends and balances it with 5 varieties of chutneys. The finishing touch involves garnishing the top with cashew nuts, raisins, and colourful tutti-frutti. Despite the abundance of items layered inside the oversized puri, each plate is priced at just 50 rupees.
Operating Hours and Customer Demand
The stall operates daily from 12:00 PM in the afternoon until 9:00 PM at night. According to Gupta, regular daily sales fluctuate between 50 and 100 plates of the signature chaat, with peak hours occasionally resulting in long queues of waiting patrons. Jalal Hashmi, a customer who tried the dish for the first time, remarked that the distinctive blend of flavours stood out immediately, prompting him to plan a return visit in the near future.
