Festivals call for an array of sweet treats at home, and if you are looking to prepare something truly unique and delicious, you can try making the famous Ghari sweet from Surat, Gujarat. This distinct dessert is primarily found exclusively in that single region. While those living near Surat are likely familiar with its taste, people residing in other parts of the country can easily recreate this recipe at home. The sweet offers a rich combination of ghee, mawa, besan, and assorted dry fruits. You can quickly note down the step-by-step preparation method to make it yourself.
Step-by-Step Instructions to Prepare Surat Ghari
To begin the preparation, heat 3 spoons of desi ghee in a pan first. Add 4 spoons of coarsely ground besan to it. Sauté the besan and ghee on a low flame until a pleasant aroma arises, and then set it aside to cool down completely.
Next, place a kadhai on the stove and add 600 grams of mawa to it. Mix in 1 cup of powdered sugar or tagar thoroughly. Once the mawa melts, add saffron, green cardamom powder, and 400 grams of dry fruits including finely chopped cashews, almonds, pistachios, and charoli.
After blending all the ingredients properly, turn off the heat. Stir in the roasted besan and mix the entire mixture thoroughly. Once it cools down, shape the mixture into round peda-like balls or use a small bowl to mold them into baati-like shapes.
In a separate bowl, knead a very soft dough using 2 cups of maida and 1 spoon of ghee. Take small portions of this dough, roll them out into thin puris, place a prepared mawa baati in the center of each puri, seal them completely, and trim away any excess dough.
Now, fry the prepared stuffed baatis. Heat desi ghee in a kadhai on a high flame, place the baatis in a frying strainer, lightly fry them, and remove them immediately. Repeat this process for all the stuffed baatis.
Final Storing and Serving Process
Take the cooled, fried baatis and dip them on one side into chilled, set ghee so that a layer of ghee clings to them. Garnish the top with pistachios and place the sweets in the refrigerator to allow the outer layer of ghee to set properly. Serve them chilled, or enjoy them plain without the extra layer of ghee if preferred.
Anyone who tastes this sweet will surely acknowledge that they have never experienced such a wonderful flavor before. Guests visiting your home will definitely inquire where you bought it or how you prepared it. You can easily make and enjoy this delicacy during festive occasions like Karwa Chauth or Diwali.
