Few breakfast dishes rival the comfort and indulgence of a freshly cooked layered flatbread infused with spiced onions. The crispy exterior combined with distinct, buttered layers and savoury aromatics elevates an everyday meal into a memorable culinary experience. Making this flaky delicacy requires neither complicated pantry staples nor specialised equipment, relying entirely on basic kitchen ingredients, thoughtful dough resting, and simple folding techniques.
Essential Ingredients and Measurements
The base dough requires two cups of whole wheat flour, salt adjusted to taste, plain water as needed, and one teaspoon of cooking oil to ensure elasticity. For the aromatic inner filling, assemble four finely sliced onions, two teaspoons of Kashmiri red chilli powder, half a teaspoon of coriander powder, and half a teaspoon of cumin powder. Complete the spice blend with half a teaspoon of nigella seeds, carom seeds, garam masala, black salt for depth of flavour, two finely chopped green chillies, fresh chopped coriander leaves, and one teaspoon of raw mustard oil to bind the seasoning.
Kneading and Resting the Dough
Begin by preparing the dough foundation in a wide mixing bowl. Combine the whole wheat flour with table salt, gradually pouring in water while working the flour into a pliable, smooth consistency. Once gathered into a cohesive mass, drizzle one teaspoon of oil across the dough and knead vigorously for another minute until the exterior becomes completely smooth. Cover the prepared dough with a clean, damp cloth and set it aside to rest undisturbed for 15 to 20 minutes. This resting phase relaxes the gluten network, making the dough effortlessly rollable without springing back.
Crafting the Spiced Onion Filling
While the dough rests, prepare the stuffing without letting it turn soggy. Slice the four onions into uniform, thin slivers and transfer them to a mixing bowl. Sprinkle a pinch of salt over the slices and allow them to sit for several minutes, drawing out excess moisture naturally. Squeeze the softened onions firmly between your palms to extract all surplus liquid before transferring the drained onions to a clean bowl. Stir in the Kashmiri red chilli powder, coriander powder, cumin powder, garam masala, black salt, chopped green chillies, nigella seeds, carom seeds, fresh coriander, and mustard oil until evenly coated. Removing the liquid prevents the flatbread from tearing open during rolling.
Layering Technique and Rolling
Divide the rested dough into equal-sized portions and shape them into neat round balls. Take one dough ball, place it on a rolling board, and roll it out flat into a classic round disc like a thin chapati. Spread a measured portion of the seasoned onion filling uniformly across the entire surface. Make a single straight slit from the dead centre of the disc outward to the perimeter edge. Starting from the cut edge, roll the dough tightly around itself into a cone shape, then stand the cone upright and press down gently from the pointed apex to form a spiralled, layered patty. Dust lightly with dry flour and roll out carefully with gentle pressure so the layers stay intact.
Cooking to Golden Crispness
Place a flat skillet over medium heat and allow it to preheat thoroughly. Lay the rolled paratha onto the hot surface, cooking both sides dry for a brief moment until faint spots emerge. Apply ghee generously over both surfaces, pressing the edges down gently with a flat spatula while flipping periodically. Continue cooking until both sides turn richly golden and intensely crisp to the touch. Remove the flatbread from the heat and serve piping hot alongside fresh yoghurt, cooling dips, spicy green chutney, or traditional tangy pickle.
