How to make sooji dhokla step by step

Sweety Patel from Khandwa explains that idli and dhokla made from sooji, or rava, come together at home with very little effort or time. For the dhokla, gather 1 cup sooji, half a cup of curd or chaas, half a cup of water, salt to taste, grated ginger, green chillies, and 1 small teaspoon of Eno.

Mix the sooji, curd, water and salt together in a bowl, cover it and set it aside for 15 minutes so the sooji swells up properly. Then stir in the grated ginger and green chillies. Just before steaming, add the Eno and mix the batter gently but thoroughly. Pour the batter into a greased plate and steam it for about 15 minutes. Once it cools, cut it into pieces. Finish it off with a tempering of mustard seeds, sesame seeds, curry leaves and green chilli poured over the top.

Soft sooji idli in 15 minutes flat

The idli batter uses almost the same ingredients, 1 cup sooji, half a cup curd or chaas, a little water, salt to taste, and 1 small teaspoon of Eno or baking soda. Mix the sooji and curd with water and let it rest for 20 minutes so the batter sets well. After that, stir the Eno into the batter and immediately spoon it into an idli stand without delay, then steam for 15 minutes. The result is soft, fluffy idlis ready to be served.

Best served with chutney, and easy on the stomach too

Both the sooji idli and dhokla pair well with coconut chutney, sambar or green chutney. The combination tastes great and is considered light on the stomach as well.
