Eatery owner Ashok Sah explains that the process begins by slicing fresh bread into two equal halves. Both pieces are thoroughly dipped in rich butter before a generous slice of fresh paneer is placed between them. The stuffed bread is then wrapped completely in a special batter mixture consisting of arrowroot flour and crunchy sev. Once coated, it is deep fried in boiling hot oil until it achieves a perfect golden crunch. The piping hot cutlet is served alongside sweet chutney, spicy green chutney, and fresh salad.

Mama Dukan operates continuously from 8:00 AM in the morning to 9:00 PM at night. According to the shop owner, daily sales average around 150 pieces of paneer cutlets alone, excluding vegetable variants. Demand reaches peak levels during the monsoon season when wet weather drives locals to crave spicy, freshly fried snacks. Whenever residents desire a savory evening treat, the shop witnesses long lines of eager buyers.

The shop's reputation has spread beyond its immediate neighborhood. Aryan, a resident of Sector-3, shared that he routinely travels between 1 to 1.5 kilometers specifically to eat the paneer cutlets at Mama Dukan. He noted that the unmatched crispiness, authentic taste, and unbeatable ₹12 price tag make the trip worthwhile, compelling regular customers to return frequently.
