For the past 10 years, a local vendor named Rajesh has been serving freshly fried fritters that have drawn food lovers from across the region. Rajesh operates his food stall daily from 3:00 PM until 9:00 PM. Visitors to the cart can choose from five hot, freshly made pakodas: classic aloo (potato), baingan (eggplant), gobhi (cauliflower), lauki (bottle gourd), and crisp bread pakodas. To elevate the eating experience, each serving comes accompanied by three varieties of homemade traditional chutneys: fresh green coriander chutney, tangy mango chutney, and nutrient-rich amla (gooseberry) chutney. In-House Spice Blends and Custom-Ground Gram Flour
The secret behind the stall's signature taste lies in Rajesh's refusal to use commercially packaged ingredients. Instead of buying ready-made gram flour or pre-ground spice powders from the market, he purchases whole chana (chickpeas) and gets them ground into fresh besan. Furthermore, he personally selects and prepares whole spices, including garlic, onion, turmeric, garam masala, black pepper, cumin seeds, and ajwain-mangrail (carom and nigella seeds).
