The preparation is organized into two primary phases: seasoning the soya chunks and creating the vegetable sauce base.
For Soya Chunks Marination:
- 1 cup soya chunks
- 1 tablespoon cornflour
- 1/2 teaspoon Kashmiri red chilli powder
- 1/3 teaspoon black pepper powder
- 1/2 teaspoon soy sauce
- Salt according to taste

For Aromatics, Vegetables, and Sauces:
- 2 tablespoons cooking oil
- 1/2 cup chopped onions

This culinary approach replaces traditional deep frying with shallow roasting, keeping the snack lighter on the stomach while maintaining a crisp texture.
Step One: Boiling and Seasoning Soya Chunks
Begin by boiling one cup of soya chunks in a pot of water. Care must be taken not to overboil them so that their chewy structure remains intact. Once boiled, drain the hot liquid and squeeze out all excess water from the chunks thoroughly. Transfer the dry chunks into a mixing bowl, then add one tablespoon of cornflour, half a teaspoon of Kashmiri red chilli, one-third teaspoon of black pepper, half a teaspoon of soy sauce, salt as needed, and one tablespoon of oil. Mix everything thoroughly to coat each piece evenly.
Step Two: Pan Roasting Until Golden
Heat a small quantity of oil in a wide frying pan. Add the coated soya chunks and roast them gently until they turn evenly brown and crisp on the surface. Set the browned chunks aside. In a small cup, take two tablespoons of cornflour, add a splash of water, and whisk until a smooth slurry forms.
Step Three: Sautéing Aromatics and Building the Sauce
In another pan or wok, heat two tablespoons of cooking oil. Toss in the grated garlic, grated ginger, and chopped green chillies, sautéing briefly until fragrant.
