For students and young professionals living away from home in hostels, preparing a satisfying meal with minimal effort is a daily challenge. If you are looking for a simple yet incredibly flavorful dish that requires very little hard work, this unique recipe is the perfect solution. You do not need to cook any extra side dishes to go with it, as a simple combination of steaming hot kadhi and plain rice is more than enough for a complete meal.
The Right Way To Mix The Base
A home cook from Ranchi named Usha explains that the preparation begins with a very straightforward mixing process. First, take a bowl filled with an adequate amount of water, preferably slightly warm water for better blending results. Into this water, add precisely 2 spoons of gram flour, ensuring you do not exceed this exact amount, and whisk the mixture thoroughly until it is completely smooth.
Preparing The Special Spice Paste
Once the base liquid is ready, the next step involves making a flavorful seasoning paste. For this, grind together ginger, garlic, black pepper, red chili, cumin seeds, a pinch of turmeric, coriander powder, and mixed spices in a mixer grinder. Take two spoons of this freshly ground paste and blend it directly into the bowl containing the gram flour water. Finally, add salt to the mixture according to your personal taste preferences.
Tempering And Cooking In The Pan
Place a kadhai or cooking pot on the stove and pour in 2 चम्मच सरसों का तेल as 2 spoons of mustard oil. Add fenugreek seeds, bay leaves, and whole spices for tempering into the hot oil. Once the tempering sizzles properly, pour the prepared gram flour mixture into the pan and cover it with a lid. Let it simmer and cook covered for at least 15 minutes, after which you will notice the gravy thickening up nicely.
Adding Yogurt At The End
After about 15 to 20 minutes of cooking time, once the kadhi is completely ready and thick, take it off the heat. Stir in two spoons of curd, making sure the yogurt is beaten well beforehand so it blends smoothly into the dish. Your wonderful and nutritious homemade kadhi is now fully prepared to be served hot alongside a bowl of plain rice.
