Street food enthusiasts visiting Phusro in the Bokaro district of Jharkhand are flocking to Maa Jagdamba Chaat Centre to sample its celebrated Bahubali chaat. Distinguished by its generous portions and distinct blend of flavours, this culinary creation incorporates around 75 different ingredients. The dish has earned a strong local following, drawing visitors from surrounding areas who arrive specifically to experience a platter that stands apart from standard market snacks.
Fifteen Years of Experience at Affordable Rates
Stall operator Vicky Gupta has been running the eatery for the past 15 years, serving a diverse menu of traditional street delicacies. Among all the items offered, the Bahubali chaat remains the runaway favourite among regular visitors. Gupta has set the price at a modest 50 rupees per plate, ensuring that customers receive a substantial and filling serving without straining their budgets. This affordability has turned the stall into a regular hub for students and local families alike.
Preparation Method and Distinct Recipe Elements
The preparation of this mega snack follows a meticulous process. It begins with an oversized, crisp puri that is carefully hollowed out by hand to create ample space for the layered fillings. Inside, the preparer blends 5 distinct house-ground spice mixes to establish a pungent flavour profile. The puri is then loaded with warm aloo tikki, crispy papdi, savoury mixture, crunchy peanut kernels, and fine sev. To balance the texture, 5 varieties of chutneys are spooned over the mix. The presentation is finalized with a rich topping of whole cashews, raisins, and vibrant tutti-frutti bits, giving the plate both visual appeal and a rich textural contrast.
Inception of the Concept and Customer Response
Explaining the inspiration behind the offering, Vicky Gupta noted that during his lengthy career making street food, he wanted to design a novelty item that offered complete satisfaction in a single sitting. The objective was to combine wholesome quantity with lasting flavour, moving beyond ordinary chaat portions. The venture has proven successful, with everyday sales ranging between 50 and 100 plates. The outlet operates from 12 noon to 9 pm daily, frequently witnessing long queues during peak evening hours. A first-time patron, Jalal Hashmi, shared that the blend of ingredients exceeded his expectations and confirmed plans to return soon for another serving.
