Preparation and Cleaning of Ingredients
Making this flavorful bhurji begins with proper cleaning. First, wash the fresh radishes and their green leaves thoroughly with clean water. Since radish leaves often carry trapped soil and dirt, washing them meticulously is essential to avoid any grit in the final dish. Once cleaned properly, chop both the radishes and the leaves into small, manageable pieces. Cutting them evenly makes the subsequent boiling and cooking process much smoother.
Boiling in a Pressure Cooker
Next, transfer the chopped radishes and leaves into a pressure cooker, add an adequate amount of water, and place it on the stove. Let the cooker whistle about four times until the radishes and leaves become completely tender and soft. Turn off the heat once done. After the pressure inside the cooker releases naturally, take out the boiled mixture. The most crucial step here is to thoroughly squeeze out all the excess water from the boiled leaves and radishes.
