Required Ingredients
Creating this traditional dish requires basic pantry staples. According to food blogger Kalpana Sharma, the necessary items include one cup of whole wheat flour, three-fourths cup of sugar or jaggery, two small spoons of curd, one-fourth small spoon of cardamom powder, eight to ten black peppercorns, eight to ten fennel seeds, two pinches of orange food color, ghee for frying, and water as required. You can slightly adjust these ingredient quantities depending on personal taste preferences.
Preparing the Batter
The cooking process begins with mixing the base ingredients. Food blogger Kalpana Sharma noted that one should first take a wide vessel and add whole wheat flour to it. Sugar, cardamom powder, black peppercorns, and fennel seeds are then mixed into the flour. By adding water gradually, a smooth and thin batter is whipped up. It is important to ensure that no lumps remain in the mixture. If you prefer using jaggery instead of sugar, dissolve the jaggery in warm water beforehand and let it rest. Once dissolved completely and cooled down, strain the jaggery water into the flour mix. Finally, add the curd and orange food color, blending everything thoroughly.
Fermentation and Frying Steps
Once the batter is ready, cover and set it aside for roughly two hours. This resting period allows the mixture to mature properly, resulting in a fine latticed texture during frying. After two hours, whisk the batter once more to ensure smooth consistency. Heat ghee in a deep pan over medium flame. Using a ladle, pour portions of the batter into the hot ghee in circular motions. Fry the items on medium heat until they turn golden brown on both sides. Once cooked completely, remove them and let the excess ghee drain off. Repeat the process for the remaining batter.
Serving Suggestions
Serve the freshly prepared lattice treats while they are still hot. They taste best when paired with rich kheer. If you wish to avoid artificial coloring, you can completely skip the orange food color.
