Carom or ajwain plants are a common sight in home gardens and balcony planters across many households. However, people frequently consider the fresh green leaves of this herb unusable and end up discarding them. These aromatic leaves can actually be repurposed into a crunchy and flavorful homemade snack. In Jalore, homemaker Santosh Jain has turned the ajwain plant in her home courtyard into a regular source of tasty treats. Whenever fresh foliage flourishes on the plant, she harvests the leaves to prepare crispy pakoras that combine rich flavor with herbal benefits.
Harvesting and Cleaning the Fresh Green Leaves
The preparation process for ajwain leaf fritters is straightforward and requires only standard kitchen ingredients. Santosh Devi explains that the initial step involves plucking fresh and healthy green leaves directly from the plant. Before cooking, washing them thoroughly under clean running water is essential to rinse away any settled dust, soil particles, or garden residue. Once completely cleaned, the leaves are kept aside for a brief duration so the surface moisture drains off, which allows the seasoned batter to coat the leaves evenly without thinning out.
Mixing the Seasoned Gram Flour Batter
To prepare the batter, gram flour or besan is placed in a mixing bowl. Essential ground spices are blended directly into the flour, including salt to taste, red chili powder for heat, turmeric powder for a vibrant yellow hue, and a pinch of garam masala for added aroma. Water is then introduced gradually while stirring to create a thick, smooth consistency. Maintaining the right texture is crucial, as the batter should neither turn excessively watery nor remain overly dense. The proper thickness ensures that each leaf receives a uniform coating when dipped.
Frying to a Golden Crisp and Digestive Benefits
Once the batter reaches the required consistency, cooking oil is heated thoroughly in a traditional frying pan or kadhai. The dry ajwain leaves are dipped individually into the spiced gram flour mix, ensuring every side is covered, and then gently lowered into the hot oil. They are fried on both sides, flipping them periodically until they turn crisp and achieve a distinct golden-brown color. Once cooked through, they are lifted out of the oil to drain. Ajwain is traditionally considered beneficial for gastric comfort and digestive health, making these homemade pakoras a practical and healthy alternative to wasting fresh kitchen-garden leaves.
