Proper Potato Selection, Cutting, and Soaking Method
The recipe begins with choosing a single large potato. Selecting a large potato is essential so that uniform long strips can be cut. After peeling, the potato is sliced into long finger strips matching the classic French fries shape. These sliced pieces are immediately submerged in a bowl of clean water and left to soak for 2 minutes. Soaking for 2 minutes helps wash the surfaces thoroughly before the potato strips are drained and prepared for frying.
Frying Technique, Heat Management, and Salt Precaution
To start frying, a kadhai is filled with a slightly larger quantity of oil to ensure the potato strips are completely submerged.
