For a family of about four people, you will need roughly half a kilogram of potatoes. Additionally, you will need four to five onions, two tomatoes, green chilies, and fresh coriander leaves. Mustard oil and cumin seeds are required for cooking, while chat masala, sabzi masala, and red chili powder can be added to enhance the taste.

The process of making this delicious dish is quite simple. First of all, wash the potatoes thoroughly and boil them properly. Once boiled, chop them into pieces like you would for any regular vegetable curry. Meanwhile, chop the onions, tomatoes, and green chilies finely. Now, take a pan and add about two large capfuls of mustard oil. Once the oil is hot, add cumin seeds and let them sizzle, then add the finely chopped onions and sauté them well. After the onions are cooked nicely, add the chopped tomatoes and green chilies to the pan.

Once the tomatoes, chilies, and onions are cooked completely, add the chopped potatoes to the mixture. Rahul Rai explained that after adding the potatoes, you need to cover the pan and wait for about 2 to 3 minutes. After 2 to 3 minutes, remove the lid, mix everything thoroughly, and wait for another 2 minutes. After waiting for those 2 minutes, your hot and spicy aloo bhurji will be ready to serve. Finally, garnish it with freshly chopped green coriander leaves so that the aroma of coriander infuses into the bhurji. You can enjoy this wonderful dish with puris, rotis, or even dal and rice.
