Upma is widely celebrated across South India as a highly popular, nutritious, and wholesome morning meal. Prepared primarily using semolina, fresh vegetables, and light spices, this dish serves as an ideal choice for breakfast or a light snack. Because it cooks quickly and tastes wonderful, many households prefer it to kickstart their day. If you want a wholesome option that does not take hours in the kitchen, following a simple method can help you achieve the best results.
Preparation and Roasting the Semolina
To begin making this dish, keep one teaspoon of grated ginger ready along with other basic ingredients like semolina, vegetables, oil or ghee, mustard seeds, split Bengal gram, black gram, curry leaves, and green chilies. Take a dry pan and add the semolina to it without any oil. Roast it on a low flame for 4 to 5 minutes, ensuring the color does not change while the moisture evaporates completely. Once roasted, transfer the semolina onto a plate and keep it aside.
Tempering and Cooking the Vegetables
Heat a little oil or ghee in the same pan. Add mustard seeds and let them splutter. Once they pop, add split Bengal gram and black gram, sautéing them until they turn light golden. Follow this by adding fresh curry leaves, chopped green chilies, and the grated ginger, stirring for a few seconds. Next, add chopped onions and cook them until they turn translucent. Toss in the chopped carrots and green peas, cooking for 2 to 3 minutes so the vegetables soften slightly and enrich the overall flavor profile of the dish.
Adding Water and Simmering the Semolina
Pour 2½ cups of water into the pan and add salt to taste. Bring the water to a rolling boil. Once it boils vigorously, lower the flame and slowly add the roasted semolina while stirring continuously to prevent any lumps from forming. After incorporating all the semolina, mix everything thoroughly. Cover the pan with a lid and let it cook on a low flame for 3 to 4 minutes until the semolina absorbs all the liquid and appears fluffy.
Turn off the heat once the mixture thickens and cooks completely. Finish by stirring in some freshly squeezed lemon juice and finely chopped fresh coriander leaves. Your soft and delicious upma is now ready to serve. You can enjoy it alongside coconut chutney, sambhar, or a hot cup of tea. For added crunch and nutrition, feel free to garnish it with roasted peanuts, cashews, or pomegranate arils.
