Roast the potatoes for roughly 8 to 10 minutes to eliminate any raw taste and release a mild, golden aroma from the pan.
Incorporating Milk and Sugar
After the potatoes are well roasted, pour milk into the pan and blend it thoroughly with the mixture. Allow it to cook for a few minutes so the potatoes absorb the liquid. Now, add sugar and keep stirring consistently. Once the sugar dissolves, the mixture will thin out initially before turning thick gradually.
Finalizing and Garnish
When the halwa thickens enough to leave the sides of the pan, stir in the cardamom powder and the roasted dry fruits. Cook the mixture for another 2 to 3 minutes. Turn off the heat once the ghee begins to separate along the edges. Serve the freshly prepared potato halwa warm in bowls, garnished with sliced pistachios or almonds on top.
