When mornings are rushed and you still want something light yet filling, a creamy corn sandwich turns out to be a great pick. It does not take long to put together, and the taste is good enough that kids eat it without any fuss. That is exactly why this sandwich has become a favourite not just for breakfast but also for packing into a child's tiffin box.
Why this sandwich wins everyone over
The real charm of this sandwich lies in its creamy, soft texture. Boiled sweet corn is mixed with finely chopped capsicum, onion and green chilli, which keeps a bit of crunch in every bite. To make the mixture thick and creamy, mayonnaise, fresh cream or thick curd is added. To boost the flavour further, crushed black pepper, chilli flakes, oregano and salt to taste go into the mix. So on one hand there is the natural sweetness of the corn, and on the other a mild spicy kick from the seasonings, and it is this combination that makes it so popular.
Ingredients you will need
- Bread slices: 4-6
- Boiled corn: 1 cup
- Mayonnaise or thick curd: 3-4 spoons
- Finely chopped capsicum: 2 spoons
- Cheese slices or grated mozzarella cheese: as needed
- Black pepper powder: half a teaspoon
- Chilli flakes and oregano: half a teaspoon
- Butter: for toasting the sandwich
- Salt: to taste
The full method
Step 1: Prepare the creamy stuffing
In a mixing bowl, add the boiled sweet corn, finely chopped capsicum and mayonnaise. Add black pepper powder, chilli flakes, oregano and salt to taste, then mix everything together well. That is all it takes to get the creamy stuffing ready.
Step 2: Spread the stuffing on the bread
Take two slices of bread. Anyone who likes it spicy can apply a light layer of green chutney or sauce on the bread first. Then spread the prepared corn stuffing evenly over the bread slice, so that every bite carries the flavour of the filling.
Step 3: Add cheese and close the sandwich
To make the sandwich even more enjoyable, place a cheese slice over the stuffing, or grate a little mozzarella cheese on top. Cover it with the second bread slice, so the filling stays sealed in between.
Step 4: Toast it on a griddle
Heat a griddle or a sandwich maker. Apply a little butter on the outer side of the bread and place it on the griddle to toast. Cook the sandwich on low flame on both sides until it turns golden and crisp, and the cheese inside melts properly. The hot, creamy corn sandwich is then ready to be served with chutney or ketchup.
