The festival of Karwa Chauth goes far beyond just prayers and fasting, as delicious food plays a central role in the celebrations. After spending the entire day without water, women often prefer a meal in the evening or the following day that is light, nutritious, and packed with flavor. In this regard, kadi serves as an excellent option. Prepared from yogurt and gram flour, this dish is not only easy to digest, but its tangy and savory profile elevates the entire dining experience. If you want to whip up something special this Karwa Chauth, adding a slight twist to the traditional recipe can make it even more delectable.
Preparing the Crispy Fritters
To begin with, the pakoras need to be made first. In a mixing bowl, combine gram flour, chopped onions, green chilies, carom seeds, and salt. Add a little water gradually to prepare a thick batter. Heat cooking oil in a frying pan, drop small portions of the batter, and fry them until they turn golden brown and crisp.
Cooking the Kadi Base
Next, whisk the yogurt and gram flour thoroughly to ensure there are no lumps left in the mixture. Add turmeric powder, salt, and water to create a thin liquid base. Pour this mixture into a deep vessel and cook it over medium heat while stirring continuously. Letting it simmer for approximately 20 to 25 minutes enhances the thickness and richness of the kadi.
Once the kadi is thoroughly cooked, gently drop the fried fritters into it and let everything simmer on low heat for about 10 minutes. This allows the fritters to absorb the flavorful broth and soften up completely.
Warm a little clarified butter in a small pan for the final tempering. Add cumin seeds, fenugreek seeds, asafoetida, fresh curry leaves, and whole red chilies to the hot butter. Once the spices begin to crackle, turn off the heat, stir in red chili powder, and immediately pour this aromatic tempering over the kadi.
Serve the piping hot kadi alongside cumin rice, plain steamed rice, or traditional pearl millet flatbreads. Garnish the dish generously with freshly chopped cilantro leaves to boost both its visual appeal and taste profile.
