- Toor Dal (Arhar Dal / Split Pigeon Peas): As required, thoroughly washed
- Garlic Cloves: 4 to 5 cloves for pressure cooking the lentils, plus 10 finely chopped cloves for the masala
- Cumin Seeds: 1/2 teaspoon for cooking lentils, plus additional for tempering
- Mustard Seeds (Rai): 1/2 teaspoon
- Turmeric Powder: 1/2 teaspoon for cooking lentils, plus a pinch for masala
- Water: 2 cups for boiling lentils, plus 1/2 cup for cooking drumsticks
- Cooking Oil: 4 tablespoons for sautéing spices
- Desi Ghee: 2 tablespoons for final tadka
- Other Essentials: Salt to taste, chopped onions, chopped tomatoes, red chili powder, coriander powder, cumin powder, dried red chilies, fresh curry leaves, and chopped fresh coriander for garnish.
Pressure Cooking the Toor Dal
Start the process by thoroughly rinsing the toor dal under running water until clean. Transfer the washed lentils directly into a pressure cooker. Add 4 to 5 garlic cloves, 1/2 teaspoon of cumin seeds, 1/2 teaspoon of turmeric powder, salt according to your taste, and 2 cups of water. Close the cooker lid and place it over medium heat.
