Across the country, the festival of Diwali will be celebrated with grand enthusiasm on Sunday, 8 November 2026. On Diwali night, homes are brightly illuminated with glowing oil and ghee lamps. Traditionally, 5-7 lamps are lit using pure desi ghee to invoke the blessings of Goddess Lakshmi. Because festive demand often leads to adulterated ghee in retail markets, making genuine granular ghee at home provides a completely pure alternative. Preparing aromatic desi ghee at home does not require complicated equipment or traditional buttermilk churning. By utilizing collected milk cream, fresh granular ghee can be made in about half an hour.
The Direct Cream Method for Quick Granular Ghee
The most straightforward method to produce granular desi ghee involves cooking collected milk cream directly. Save the cream skimmed from daily boiled milk in a large bowl inside the refrigerator over six to seven days. Once an adequate amount has accumulated, transfer the chilled cream directly into a cooking pan placed over low heat. Stir continuously as the cream melts to prevent it from sticking or burning at the bottom of the pan. Maintain low heat for approximately 15-20 minutes, stirring steadily throughout.
As the cream cooks, its raw moisture evaporates and clear fat begins separating from the milk solids. Gradually raise the flame to high and continue stirring uninterrupted for another 5-7 minutes. During this rapid cooking phase, the cream fully releases the ghee, the mixture emits a pleasant roasted aroma, and the remaining milk granules turn a distinct golden-brown color. Once the granules achieve a deep brown shade, turn off the stove. Strain the warm liquid through a fine metal sieve into a storage container and allow it to cool down naturally. As it cools, the fat crystallizes into an authentic granular texture. This clean, homemade ghee is completely unadulterated, making it ideal for culinary use as well as for lighting ceremonial Diwali lamps.
The Cultured Butter Separation Method
Another reliable technique for extracting clear ghee involves separating butter solids from the cream before heating. Collect cream by boiling milk daily over 5-7 days until a sufficient quantity is ready. Simmer this collected cream gently over low heat, let it cool completely, and place it in the refrigerator overnight. The following morning, take out the cold cream and stir in a small splash of plain water.
Beat the mixture vigorously for about 5 minutes, which will cause firm butter to separate from the remaining liquid. Transfer the separated butter into an empty bowl. Place the butter into a pan over high heat, stirring continuously to ensure even melting. Within approximately 20 minutes of steady heating, the butter solids settle and clear ghee separates completely. To elevate the aroma of the finished product, add a small piece of cinnamon stick while it cooks. If cinnamon is unavailable, drop in three to four fresh lemon leaves instead. These simple natural additions significantly enhance the scent, yielding fragrant, premium granular ghee right in your own kitchen.
