While bottle gourd is most commonly used for everyday savory dishes, you can also transform it into a surprisingly rich and delightful dessert. Many people consume the vegetable in curries or juices, but crafting a mawa barfi from it offers a uniquely wonderful taste. You do not need expensive ingredients from the market to prepare this sweet, as it comes together quickly using basic pantry staples. Whenever guests arrive unexpectedly or you want to serve something special during celebrations, this dessert serves as a wonderful choice. The entire preparation process takes roughly thirty minutes, making it convenient even for busy schedules.
Required Ingredients and Proportions
Creating this wonderful delicacy requires a few fundamental items that are easily available. First, gather five hundred grams of fresh green bottle gourd. Along with that, keep one cup of milk, half a cup of sugar, half a cup of mawa, and two tablespoons of pure ghee ready. To enhance the flavor further, keep some cardamom powder, chopped almonds, and grated coconut nearby. You may also use other dry fruits of your choice for garnishing according to personal preference. The quantities of these ingredients can be adjusted slightly up or down depending on individual taste preferences.
Step-by-Step Preparation Method
Food expert Manisha Kanwar explained that the process begins by washing the bottle gourd thoroughly, peeling the skin, and then grating it evenly. If the vegetable contains tough seeds, it is best to discard them before proceeding further. Next, heat two tablespoons of ghee in a heavy-bottomed pan and add the grated bottle gourd to it. Sauté it well on medium heat for a few minutes to eliminate any raw aroma from the vegetable. Following that, pour one cup of milk into the pan and let the gourd cook while stirring continuously. It is important to keep agitating the mixture periodically so that it does not stick to the bottom of the vessel.
Setting and Slicing the Dessert
Once the gourd softens and the milk reduces significantly, mix half a cup of sugar into the pan. Adding sugar may release some moisture, so continue cooking the mixture on low to medium heat while stirring constantly. When the extra liquid evaporates completely, add half a cup of mawa and blend it thoroughly into the mixture. Finally, sprinkle in the cardamom powder and roast the mixture for three to four minutes until it thickens and begins leaving the sides of the pan. Grease a flat plate or tray lightly with ghee, transfer the prepared mixture onto it, and spread it out evenly. Scatter chopped almonds and grated coconut over the top, pressing them down gently. Allow the mixture to cool completely until it sets firmly, then slice the barfi into your desired shapes using a sharp knife.
