After the cumin splutters, pour in the blended tomato and green chilli paste. Mix in red chilli powder, coriander powder, turmeric, and a dash of garam masala, then sauté everything over a low flame. Continue cooking the spices until they release oil and emit a rich, appetizing aroma.

Combining the Gourd and Moong Dal

Once the masala is thoroughly roasted, add the chopped ridge gourd pieces into the pan and toss them well with the spices. Next, take a bowl of washed moong dal, rinse it with clean water, and add it to the pan as well. Pour in roughly one bowl of water to create the desired gravy consistency. Cover the pan with a lid and let the mixture simmer on a low flame for five to ten minutes, allowing the steam to soften both the gourd and the lentils quickly.
