During the winter season, enjoying traditional millet or corn flatbreads paired with pure ghee, butter, and a flavorful condiment creates an unforgettable dining experience. However, there are many days when spending time cooking a full vegetable curry feels exhausting. In such moments, having a spicy and tangy chutney on hand completely eliminates the need for any vegetable side dish. This simple yet delightful chutney made from tomatoes, garlic, and onions is incredibly easy to prepare in your own kitchen.
Chef Ashok's Recipe And Essential Ingredients
The method to create this mouthwatering condiment was shared by the famous chef Ashok (@CookingWithChefAsok). You can easily enjoy this preparation not just with traditional flatbreads but also with slices of bread. Another great advantage is that you can store it safely inside a refrigerator for one to two days. To begin making this recipe, you will first need to gather 5 to 6 fresh tomatoes and 5 to 6 garlic cloves. Cut all the tomatoes into two halves so they cook evenly.
Cooking Process And Peeling The Tomatoes
To cook the tomatoes, place a frying pan on the stove and pour in some mustard oil. Once the oil becomes slightly warm, arrange the tomato halves inside the pan. Keep the flame low and let the tomatoes cook properly from one side. After about 3 to 4 minutes, flip the tomatoes over and cook them from the other side as well. While the tomatoes are softening in the pan, you can also toss in the garlic cloves so they roast alongside.
Adding Ginger And Flavorful Spices
If you prefer an enhanced flavor profile, you can also include some finely chopped ginger during this stage. Continue cooking the tomatoes in the pan by turning them over for about 5 minutes. Once cooked properly, the skin of the tomatoes will start peeling off easily. After separating the skin, take all the tomatoes out of the pan and place them into a clean plate.
Chopping And Mixing The Final Ingredients
If you have a chopping board available, place the cooked tomatoes on it and chop them coarsely using a large knife. Using a large knife makes this task quite simple, though you can also pulse them roughly in a mixer if you prefer. Next, take two to three small onions and chop them finely. Similarly, chop some fresh coriander leaves and a little bit of mint finely. Layer these chopped ingredients directly over the prepared tomatoes.
Finalizing The Spicy Chutney And Serving
To give the chutney an appealing color and a balanced taste, add half a spoonful of red chili powder to the mix. Follow this by adding half a spoonful of regular salt, half a spoonful of black salt, a pinch of roasted cumin powder, and a tiny bit of sugar. Now, mix all these ingredients thoroughly together until they blend smoothly. Your tangy and spicy chutney is now ready to be served. Enjoy it alongside bread, regular flatbreads, or traditional winter flatbreads while storing any leftovers in the fridge.
