Once the oil gets properly heated, cumin seeds are added. As soon as the cumin seeds crackle, the prepared tomato and green chili paste is poured into the kadhai and cooked thoroughly until the raw aroma disappears.

When the tomato and green chili mixture begins to cook nicely, red chili powder, coriander powder, turmeric, salt according to taste, garam masala, and kasuri methi are added. All these spices are roasted well until the mixture starts releasing oil from the edges. Following this, the chopped Tinda pieces are added to the kadhai and mixed thoroughly with the cooked spices so that every piece gets well coated.
