The festive season brings a wave of celebrations where special dishes and sweets are prepared in every household. Buying sweets from the market often comes with the risk of adulteration involving artificial colors, low-quality khoya, and milk. Therefore, preparing fresh and pure sweets at home is a much healthier choice for your family. We are sharing a simple recipe for traditional Rajasthani Churma Laddu that you can easily make in your own kitchen. These homemade sweets make a wonderful treat for guests, and since they do not spoil quickly, they remain a favorite for both adults and children alike.
Step-by-Step Recipe for Churma Laddu
First Step: To begin making Churma Laddu, take two bowls of wheat flour and sift it properly. Add one bowl of fine semolina to the flour. If your semolina is coarse, pulse it in a mixer once to make it fine. Next, mix half a bowl of gram flour into the dry ingredients, add three spoons of desi ghee, and incorporate everything well using your hands.
Second Step: Take a portion of the dry mixture in your fist and press it to ensure enough shortening or moyan has been added, meaning the mixture should hold its shape. Knead a tight dough using lukewarm water. Divide the dough into two portions and make small dough balls. Press each ball firmly in your palm to shape them into traditional fist-like morsels.
Third Step: Place a pan on the stove and heat two spoons of ghee in it. Lightly roast some cashews and almonds in the ghee. You can adjust the quantity of dry fruits according to your preference and add other varieties if desired. Now, pour half a bowl of ghee into the pan and fry the prepared morsels in it. Make sure to keep the gas flame extremely low and fry the morsels until they turn golden brown.
Fourth Step: Once fried, break the morsels into smaller pieces so they can be ground easily. Grind the pieces into a fine powder-like texture. If there are any coarse bits remaining, sift the powder through a thick sieve. Next, heat three to four spoons of ghee in a pan and add one bowl of chopped jaggery. Stir continuously on a low flame until the jaggery melts completely.
Fifth Step: Add the previously fried and chopped dry fruits into the mixture along with two spoons of poppy seeds, half a spoon of cardamom powder, and some chopped pistachios. Pour the melted jaggery into the mixture and stir everything thoroughly with a ladle. Once the mixture cools down a bit, shape them into round laddus using your hands. You can make them in small or large sizes according to your liking and enjoy them.
