Mentioning bottle gourd often draws reluctant reactions at the dining table, with both children and adults frequently avoiding its regular vegetable preparations. Despite being packed with nutrients, its subtle and plain profile keeps many from enjoying it. However, this humble vegetable can be transformed into a decadent sweet course that pleases dessert lovers while retaining wholesome nourishment. Bottle gourd halwa, known for its luscious richness and aromatic appeal, offers an irresistible alternative that can be easily whipped up using everyday pantry essentials.
Required Ingredients and Proportions
Achieving the right balance of texture and richness depends on using precise measurements of quality ingredients. To begin, keep the following items ready
- 500 grams fresh and tender bottle gourd
- 2 cups full cream milk
- 3 to 4 tablespoons pure desi ghee
- Half cup sugar
- Half cup mawa (khoya) or milk powder
- Half teaspoon cardamom powder
- Finely chopped dry fruits: 10 to 12 almonds, 10 to 12 cashews, and 8 to 10 pistachios
Prepping and Grating the Gourd
Start by washing the bottle gourd thoroughly under running water before peeling the skin completely. When grating, exercise particular care regarding the vegetable's structure. Cut away and discard the central core containing seeds and spongy pulp. Grate only the firm outer flesh, as the inner seedy portion can release excessive moisture and alter the desired consistency of the final dish.
Sautéing and Simmering With Milk
Heat 1 tablespoon of desi ghee in a heavy-bottomed pan over medium flame. Add the grated bottle gourd and sauté it steadily for 4 to 5 minutes. This preliminary roasting eliminates the raw green aroma and dries out excess natural juices.
Pour in 2 cups of full cream milk immediately after. Maintain a moderate flame and stir the mixture at regular intervals. Allow the gourd to simmer until it softens completely and absorbs every drop of milk, leaving a thick base in the pan.
Adding Sweetness and Secondary Roasting
Once the milk has evaporated entirely, add half a cup of sugar to the pan. The sugar will quickly melt, thinning out the mixture temporarily. Continue stirring until the sweet liquid cooks down and the texture thickens once again. At this stage, incorporate the remaining 2 to 3 tablespoons of desi ghee and roast the preparation thoroughly for 4 to 5 minutes to develop a glossy finish.
Incorporating Mawa and Final Garnishing
To conclude the cooking process, blend in half a cup of mawa or milk powder alongside half a teaspoon of aromatic cardamom powder.
