Preparing the Manchurian Balls
The foundation of a great Veg Manchurian lies in getting the texture of the fried vegetable balls just right. Begin the preparation by taking a large mixing bowl to combine the base ingredients. Add finely chopped cabbage, spring onions, chopped onions, freshly prepared ginger-garlic paste, and grated or finely chopped carrots into the bowl. To infuse flavor right into the base, add chilli sauce along with half a teaspoon of salt. Mix all these ingredients thoroughly so that the spices and sauces coat the vegetables evenly.
Next, add all-purpose flour (maida) and corn flour to the vegetable mix. Knead the ingredients gently until they come together into a smooth, soft dough. Apply a small amount of oil onto your palms to grease them, which prevents the dough from sticking, and shape the mixture into small, uniform round balls. Heat oil in a deep pan or kadai over medium flame. Once the oil reaches the right temperature, carefully submerge the prepared balls into the hot oil. Deep fry them until they turn golden brown and crisp on the outside. Transfer the fried Manchurian balls onto a plate and set them aside.
Creating the Savory Gravy and Vegetables
Once the Manchurian balls are ready, shift focus to preparing the rich and aromatic gravy base. Take another kadai or clean the pan, pour in two tablespoons of oil, and set it over medium flame. When the oil heats up, toss in chopped ginger, finely minced garlic, sliced green chillies, and chopped spring onions. Saute these aromatics briefly until they release their fragrance. Following this, add finely chopped onions, capsicum, and carrots into the pan. Stir-fry the vegetables on medium-high heat, ensuring they retain their vibrant color and crunchy texture without becoming overcooked.
Season the stir-fried vegetables by pouring in vinegar, chilli sauce, soya sauce, and salt according to your taste preferences. Stir all the sauces together so that they wrap around the crunchy vegetables. To give the gravy its characteristic silky sheen and thickness, prepare a corn flour slurry in a separate container. Mix one teaspoon of corn flour into one-fourth cup of water until completely smooth without any lumps.
Combining the Balls and Serving Hot
Pour the prepared corn flour slurry into the pan with the vegetables once they are cooked to perfection. Immediately add extra cabbage and the pre-fried Manchurian balls into the simmering sauce. Stir-fry the mixture continuously so that every single ball absorbs the rich flavors and gets thoroughly coated with the glossy sauce. Sprinkle black pepper powder according to taste and mix all ingredients well.
Allow the dish to cook for a short period while stirring gently, giving enough time for the spices, sauces, and vegetables to fuse together into a harmonious dish. Once done, remove from heat and garnish generously with freshly chopped green spring onions.
