This dish is not only delicious to eat but is also highly favored by children and adults who typically hesitate to consume eggplant dishes. It features a perfectly crispy outer crust while remaining beautifully soft on the inside.
Essential Ingredients for Baingan Bhaja
You do not need any elaborate preparation or fancy ingredients to make this wonderful Bengali delicacy. According to Chef Shalu, only a few basic pantry staples are required. The star ingredient is a single round eggplant. For the spice coating, you will need salt, turmeric powder, coriander powder, garam masala, dry mango powder (amchur), gram flour (besan), and a little bit of rice flour. The rice flour plays a crucial role in giving the eggplant slices that signature crispy texture. Finally, you will require mustard oil for frying, which imparts the traditional, authentic flavor to the dish.
Step-by-Step Preparation and Marination
The preparation of Baingan Bhaja begins with thoroughly cleaning the eggplant. First, slice off the top stem of the eggplant. Following this, cut the eggplant into circular, moderately thin slices. Ensure that the slices are neither too thick nor too thin, as this affects the cooking time and texture. Now, wash these freshly cut slices thoroughly under clean water and transfer them into a large mixing bowl.
The next step involves applying the spice mixture to the wet eggplant slices. In the bowl containing the slices, add salt to taste, turmeric powder, coriander powder, dry mango powder, a pinch of garam masala, gram flour, and the rice flour for crunchiness. Using your hands, gently toss and coat the eggplant slices so that the dry spices and flours cover every slice evenly on both sides. If your family has any other specific spice preferences, you are completely free to add them at this stage according to your taste.
Once the coating is complete, avoid the mistake of frying the eggplant slices immediately. Let the spiced slices rest undisturbed for a while. This can be understood as an essential marination process. Allow the eggplant to marinate for at least 15 minutes and up to a maximum of 30 minutes. During this resting period, the moisture from the eggplant helps the spices dissolve and penetrate deep inside the slices, doubling the depth of flavor.
The Perfect Frying Technique
After the marination period is complete, turn on the stove and place a griddle (tawa) or a pan over the heat. The true essence of Bengali dishes comes from mustard oil, so add an adequate amount of mustard oil to the heated pan. Once the oil gets hot and starts releasing a gentle smoke, carefully place the marinated eggplant slices onto the pan one by one.
Shallow fry the eggplant slices on a medium flame, flipping them periodically to ensure even cooking on both sides. Cook them until the color turns into a beautiful golden-brown and the outer edges become visibly crispy and firm. Once the eggplant is tender on the inside and crunchy on the outside, remove them from the heat.
