Whenever the monsoon arrives, the kitchen naturally calls for something hot, spicy, and comforting. Sitting with a cup of tea while enjoying crunchy snacks makes the rainy weather feel truly special. However, if you are tired of eating the same old potato fritters every time and want a delightful change, you should try making aloo chop instead. This snack differs slightly from regular fritters because it involves wrapping a spiced potato filling inside a batter made of gram flour and corn starch, then frying it until it turns golden brown and crispy.
Being crispy on the outside and soft and flavorful on the inside gives this snack a distinct taste. Preparing it does not require any fancy ingredients. You can easily whip up a wonderful evening snack using potatoes, gram flour, and a few basic spices already available in your kitchen.
How to Prepare Crispy Aloo Chop at Home
The secret of a great aloo chop lies entirely within its stuffing. To begin making this snack, first boil two large potatoes, let them cool down completely, peel them, and mash them thoroughly. Try to ensure there are no large lumps left in the potatoes so that you can easily shape the cutlets.
Heat a little oil in a pan and sauté finely chopped onions until they turn light golden. Next, add ginger-garlic paste, and after cooking it for a few seconds, mix in turmeric powder, red chili powder, and garam masala. Do not roast the spices on high heat for too long, or their flavor might turn bitter. Following this, add finely chopped green chilies and fresh coriander leaves. Now, add the mashed potatoes into the pan and mix everything well with the spices. After roasting the mixture for two to three minutes, turn off the heat and transfer the potato stuffing to a plate to let it cool down slightly.
Prepare the Batter for a Crunchy Outer Layer
In a separate bowl, take gram flour, corn starch, and baking soda. Add salt to taste and pour in water gradually to make a thick batter. The batter should not be too runny. If the batter is overly thin, it will fail to form a proper coating over the potato cutlets.
Now take the cooled potato stuffing and shape it into small round or slightly flattened patties. Dip each patty thoroughly into the prepared batter so that an even coating covers all sides.
Fry on Medium Heat for the Best Results
Heat enough oil in a pan for deep frying. If the oil becomes excessively hot, the outer layer will brown too quickly while the inner portion remains undercooked. Therefore, it is best to fry the chops over medium heat. Carefully drop the potato patties into the hot oil and fry them from both sides until they turn golden and crispy. Remove the finished chops and place them on a tissue paper or a plate so that any excess oil drains away.
Serve your hot aloo chop alongside green chutney, tamarind chutney, or tomato sauce. Enjoying this crunchy snack with your evening tea will feel like a mini feast during the rainy season. If you prefer, you can further enhance the flavor to your liking by mixing in a little chat masala or adding extra finely chopped coriander leaves to the stuffing.
