This cool and healthy dessert is perfect for beating the summer heat.

Made with rich milk rabri, soft mango falooda noodles, healthy sabja seeds, and creamy vanilla ice cream, this multi-layered dessert is the ultimate tribute to your father's endless love and support. Here is how you can prepare it easily at home.

Ingredients Required for Mango Falooda

Gather the following ingredients before starting the preparation:

For Preparing the Rabri (Yields 250g)

  • Full-fat milk
  • Sugar (as per taste)
  • Cardamom powder
  • Rose water (1 teaspoon, optional)

For the Falooda and Custard Base

  • Fresh ripe mango (1 piece)
  • Fine sugar
  • Vanilla custard powder (1 cup, before adding water)
  • Powdered sugar (2 tablespoons)
  • Chilled water and ice-cold water in a bowl

For Assembly and Garnish

  • Rose syrup
  • Soaked sabja seeds (basil seeds)
  • Fresh mango chunks
  • Vanilla ice cream (1 scoop)
  • Tutti-frutti
  • Chopped dry fruits (pistachios, cashews, almonds, and raisins)

Step-by-Step Recipe Guide

Preparing the Creamy Rabri

Pour full-fat milk into a heavy-bottomed pan and bring it to a boil. Once boiled, lower the flame and let it simmer. Stir occasionally to prevent the milk from burning at the bottom. Add sugar and continue cooking on low heat until the milk thickens and reduces to one-fourth of its original volume. Turn off the stove. Grind some cardamoms in a mixer to make a fine powder and mix it into the thickened milk. You can also add a teaspoon of rose water for an aromatic touch. Let the rabri cool down completely.

Making the Fresh Mango Falooda Noodles

Take a fresh mango, peel it, and scoop out the pulp into a bowl. Blend the pulp in a mixer to create a smooth puree. Add fine sugar, custard powder, and slowly pour in a little water, mixing it thoroughly to avoid lumps. Transfer this mixture into a pan, turn on the stove, and cook on low heat while stirring continuously. The mixture will gradually thicken and turn glossy.

Now, take a falooda press machine and fill it with the warm mango mixture. Keep a large bowl filled with ice-cold water ready. Press the mango mixture through the machine directly into the ice water to form noodle-like strands. Leave the falooda undisturbed in the cold water for about five minutes to allow it to firm up and set perfectly.

Assembling the Dessert Glass

Take a tall serving glass to assemble this beautiful dessert. Start by drizzling some sweet rose syrup at the bottom of the glass. Next, add a generous layer of the prepared chilled rabri. Carefully strain the mango falooda from the ice water and add a layer of it into the glass. Follow this with a layer of soaked sabja seeds and a handful of fresh mango chunks. Repeat the layers with another spoonful of rabri and mango falooda. Crown the dessert with a single scoop of rich vanilla ice cream. Finally, garnish with colorful tutti-frutti and a mix of chopped pistachios, cashews, almonds, and raisins. Your delicious Mango Falooda is ready to be served.
