Deciding what to prepare for dinner every evening can often feel like a daily challenge in every household. If you are tired of the usual vegetable curries and want to cook something quick, delicious, and nutrient-dense, Besan Bhurji serves as an exceptional dinner choice. Made from standard gram flour and basic kitchen spices, this dish appeals to kids and adults alike. Visually and texturally similar to classic egg scramble, this dish offers a completely vegetarian alternative that comes together in under twenty minutes. It pairs wonderfully with warm rotis, parathas, or toasted bread slices.
Ingredients Needed for Besan Bhurji
To prepare this savory scramble, gather the following exact measurements of ingredients to ensure perfect consistency and flavor
- Main Base: 1 cup gram flour (besan) and 1 cup water
- Vegetables: 3 small onions (coarsely chopped) and 1 medium tomato (finely chopped)
- Aromatic Chopper Mix: 3-4 garlic cloves, 1-inch ginger piece, and 2 green chillies
- Tempering & Fat: 1-2 tbsp butter, 1 tsp oil, 1/2 tsp asafoetida (hing), and 1 pinch cumin seeds (jeera)
- Spice Powders: Salt to taste, 1/4 tsp turmeric powder, 1/4 tsp Kashmiri red chilli powder, 1/2 tsp coriander powder, 1 pinch garam masala, and 1 pinch crushed black pepper
- Garnish: 1 handful fresh coriander leaves
Initial Prep and Batter Mix
Start by taking 1 cup of gram flour in a clean mixing bowl. Slowly pour 1 cup of water into the bowl while whisking continuously to prevent any lump formation. Once you achieve a smooth, uniform batter, set it aside for a few minutes to let the gram flour absorb moisture properly. Next, chop the onions into coarse pieces. Place the garlic cloves, ginger, and green chillies into a manual chopper and process them finely. Chop the medium tomato into neat small cubes as well.
Cooking the Masala Base
Heat a frying pan over medium flame and add 1 teaspoon of oil. Once the oil heats up, toss in 1/2 teaspoon of asafoetida and 1 pinch of cumin seeds, letting them sizzle and release their aroma. Add the chopped onion, garlic, ginger, and green chilli mixture into the pan. Saute continuously until the onions turn soft and translucent with a light color. Next, add the chopped tomato along with salt to taste. Turn the heat to high and cook for about one minute until the tomatoes soften slightly.
Adding Spices and Cooking the Gram Flour
Lower the heat and incorporate 1/4 teaspoon turmeric powder, 1/4 teaspoon Kashmiri red chilli powder, 1/2 teaspoon coriander powder, and 1 pinch of garam masala. Mix the spices thoroughly with the onion-tomato base and saute on low heat until fragrant. Give the reserved gram flour batter a quick stir, then pour it directly into the frying pan over the cooked masala base. Do not stir immediately; cover and allow it to cook undisturbed on low heat for 4 to 5 minutes until the batter sets firm. Once set, use a spatula to break the cooked besan into scramble-like crumbles and toss well with the masala.
Finishing Touch and Serving Suggestions
Splash a small amount of warm water over the scrambled besan and cook on low heat for an additional 3 to 4 minutes. This step ensures the scramble softens into a light, tender texture closely resembling egg bhurji. Finally, stir in 1-2 tablespoons of butter, a pinch of freshly crushed black pepper, and freshly chopped coriander leaves. Your savory Besan Bhurji is ready to be served hot alongside freshly puffed rotis, crisp parathas, or toasted bread slices.
