When you want something quick and flavorful to accompany your daily meals at home, preparing a traditional pointed gourd fry proves to be an excellent choice. It does not require a long list of ingredients and tastes exceptionally good when paired with dal-chawal, simple rotis, or hot puris. To begin making this dish, take about 500 grams of fresh patal or pointed gourd. Wash them thoroughly in clean water and trim off both ends. Next, slice the gourds lengthwise into thin pieces. Keep in mind that the slices should not be cut too thick, because thin pieces fry evenly and turn out much crispier and tastier.
The Marination Process
Transfer the sliced gourds into a mixing bowl and add approximately half a spoon of turmeric powder, salt according to taste, and about half a spoon of red chili powder, mixing everything thoroughly. If you prefer a richer flavor profile, you can also add a pinch of coriander powder at this stage. Once the spices are evenly coated, let the mixture rest for about 10 to 15 minutes so that the salt and spices penetrate deep inside the vegetable pieces.
Cooking and Frying Instructions
After the marination time is complete, place a heavy-bottomed kadhai on the stove and heat about 3 to 4 tablespoons of mustard oil until it is thoroughly hot. Once the oil is heated, add a pinch of cumin seeds and finely chopped green chilies. As the cumin seeds begin to crackle, carefully add the seasoned pointed gourd slices into the kadhai. Keep the flame at a medium setting and sauté the pieces by stirring continuously. Cook the gourd for roughly 15 to 20 minutes, stirring at regular intervals to ensure all pieces cook evenly and do not stick or burn at the bottom.
Achieving the Perfect Crispness
When the pieces turn a light golden color and the edges look wonderfully crisp, your patal bhaja is ready to serve. If you prefer an extra crunch, you can lower the flame and roast them for another 2 to 3 minutes. This simple method yields a delicious homemade side dish without requiring excessive effort or elaborate preparation. Serve it piping hot alongside dal and steamed rice, rotis, or puris.
