Evening tea often calls for a hot and flavorful accompaniment, particularly when children or family members look for a quick bite between meals. While instant noodles remain an enduring favorite in households across the country, serving them in conventional broth or tossed forms can feel repetitive. Transforming ordinary noodles into crisp fritters offers an innovative alternative that requires minimal pantry ingredients. A single ₹10 packet of instant noodles, combined with everyday staples like gram flour and semolina, is enough to assemble this budget-friendly appetizer.
Preparation Takes Just 15 to 20 Minutes
Ranchi based cooking expert Kuku points out that preparing these noodle fritters is straightforward and quick. The entire cooking process wraps up in approximately 15 to 20 minutes. While a single ₹10 packet works well for a smaller portion, households preparing snacks for more people can easily scale up by using two packets. The initial step requires boiling the noodles in plain water until cooked, followed by draining and setting them aside to cool slightly.
Creating the Seasoned Gram Flour Base
To construct the batter, take a mixing bowl and combine a portion of gram flour with a small quantity of semolina, which provides the fried fritters with an extra crunchy exterior. Season the dry ingredients with turmeric powder, coriander powder, a pinch of asafoetida, cumin powder, and black pepper powder. Add mixed spice blend, ginger-garlic paste, salt to taste, and a dash of mustard oil. Once the spice blend is evenly distributed, fold in the boiled noodles and gently combine everything by hand.
Managing Moisture in the Mixture
Maintaining the right consistency requires careful handling of liquids. Because the noodles are pre-boiled, they already retain significant internal moisture. Extra water should strictly be avoided during the initial mixing stage to prevent the batter from turning runny. If the mixture appears overly dry and refuses to bind, sprinkle merely a few droplets of water. The resulting mixture must remain dense and thick so that individual portions hold their form when dropped into hot oil.
Frying to a Golden Crisp and Serving
Heat frying oil thoroughly in a pan or wok over medium heat. Once the oil reaches frying temperature, shape small portions of the dense noodle mixture and drop them gently into the hot oil. Keeping the fritters small ensures that the heat penetrates completely to the core, yielding an even, crunchy texture throughout. Fry until the pieces turn uniformly golden brown, then drain excess oil. Serve the freshly fried fritters piping hot alongside fresh green coriander chutney.
