A shocking disclosure has emerged regarding the kitchen hygiene standards of high-end dining establishments in Karnataka. In a sweeping crackdown across Bengaluru, officials from the Food Safety and Drug Administration Department discovered rotten meat, moldy vegetables, and expired dairy products inside the kitchens of premier 5-star and 3-star hotels. The sudden inspections revealed severe hygiene violations in luxury venues where consumers pay premium prices, prompting state authorities to initiate legal proceedings against non-compliant hotel managements.
30 Specialized Teams Inspect 26 Premium Hotels Across Bengaluru
To evaluate whether high-profile hospitality establishments strictly adhere to statutory hygiene protocols, the department deployed 30 dedicated teams of Food Safety Officers across all zones of the Brihat Bengaluru Mahanagara Palike (BBMP). The operation targeted 26 luxury properties located within the Bengaluru Urban district. Inspectors checked kitchen premises, storage facilities, and food preparation areas to verify compliance with the provisions established under the Food Safety and Standards Act, 2006.
Unhygienic Storage, Fungal Growth, and Non-Segregation of Food
During the inspection drive, officers documented widespread operational lapses. Kitchen cleanliness in multiple luxury hotels was found to be severely compromised, with raw ingredients stored under improper temperature and environmental conditions. Inspectors observed active mold growth on fresh produce and seized various food items that had passed their expiration dates. Additionally, authorities noted violations of labelling guidelines set by FSSAI, including missing production details. In several establishments, vegetarian and non-vegetarian items were stored together without proper segregation, breaking fundamental food safety directives.
Hotel-Wise Breakdown of Confiscated and Destroyed Food Items
Substantial quantities of unsafe and contaminated food products were confiscated and destroyed on the spot across multiple prominent properties
- Radisson Blu (The Atria): Recorded the highest total seizure, where officials destroyed 105 kg of expired items comprising chicken, meat, fish, and vegetables.
- Lalit Ashok (Annex South): Officers confiscated and disposed of 76 kg of spoiled meat, 200 kg of decayed vegetables, and 32 liters of expired milk.
- Taj Yeshwantpur: Authorities seized 72 kg of contaminated meat and fish from storage units.
- Four Seasons Hotel Bengaluru: Officials confiscated 19 kg of unsafe meat during their check.
- Shangri-La Bengaluru: Inspectors recovered and seized 15 kg of sub-standard meat.
- Vivanta Bengaluru Whitefield: 3 kg of expired bakery items were identified and destroyed.
35 Samples Dispatched for Laboratory Testing Amid Legal Warnings
As part of the ongoing enforcement effort, food safety officers gathered 35 official samples for detailed laboratory testing. The collected samples include chicken, mutton, fish, edible oil, milk, spices, tea powder, cheese, tomato sauce, and lemon juice. Further administrative and legal measures will depend on the certified test results received from the laboratory. Health Minister U.T. Khader emphasized that the objective of these surprise raids is to enforce uniform compliance with food safety regulations across all hospitality tiers, warning that strict penalties will be imposed on any food business operator that compromises public health standards.
