A major food safety operation in Bengaluru has exposed shocking hygiene and storage lapses across top-tier hospitality establishments. Luxury three-star and five-star hotels, typically associated with strict quality control and premium dining experiences, were subjected to unscheduled inspections by the Food Safety Wing of the Health and Family Welfare Department. The special drive covered 26 high-end hotels across the city, revealing widespread non-compliance with statutory sanitation standards. Inspecting officers discovered spoiled meat, expired dairy products, moldy vegetables, and unsafe bakery goods inside hotel kitchens. Authorities collected 35 samples of various food items during the operation and dispatched them to food testing laboratories for detailed chemical analysis.
30 Food Safety Teams Conduct Surprise Raids Across GBA Zones
The inspection drive was executed under the direction of State Health Minister U.T. Khader. Food safety officials organized into 30 specialized inspection teams to conduct simultaneous raids across all GBA zones within Bengaluru Urban district. The primary mandate of the crackdown was to enforce compliance with the Food Safety and Standards Act, 2006, along with its mandatory licensing and hygiene directives. The sudden enforcement action caught management teams at several leading hotel chains off guard.
Key Violations Found: Rotting Meat, Moldy Produce, and Improper Storage
Inspecting teams documented extensive food contamination and improper cold chain management across multiple hotel kitchens. Officers seized moldy vegetables, expired dairy supplies, outdated bakery items, and spoiled stock of chicken, fish, and red meat. The raid teams also identified cross-contamination risks resulting from failure to segregate vegetarian and non-vegetarian storage areas. Several establishments violated mandatory FSSAI labeling guidelines and displayed incorrect product branding. Dirty kitchen premises and compromised storage spaces presented direct health hazards to hotel guests and restaurant patrons.
Hotel-Wise Breakdown of Seized and Destroyed Food Quantity
Food safety personnel confiscated and destroyed substantial quantities of unfit food items from renowned luxury hotels across the city. The breakdown of seized inventory includes
- Radisson Blu (The Atria): Authorities confiscated 105 kg of expired food, comprising 50 kg of chicken, 25 kg of meat, 23 kg of fish, and 7 kg of vegetables.
- The LaLiT Ashok (Annex South): Officers seized and destroyed 76 kg of meat, 200 kg of spoiled vegetables, and 32 liters of expired liquid produce.
- Taj Yeshwantpur: Officials seized 72 kg of sub-standard meat and fish stock.
- Four Seasons Bengaluru: Raid teams confiscated 19 kg of unsafe meat.
- Shangri-La Bengaluru: Inspectors seized 15 kg of sub-standard meat.
- Vivanta Whitefield: Authorities confiscated 3 kg of expired bakery items.
Legal Notices Issued and Next Steps by Health Authorities
The Food Safety Commissioner confirmed that legal notices have been served to the defaulting Food Business Operators (FBOs). Formal legal proceedings will be initiated in accordance with statutory provisions under the Food Safety and Standards Act, 2006. The state-wide crackdown was launched following numerous consumer complaints regarding sub-standard food quality and lack of cleanliness in commercial kitchens across Bengaluru and other major urban centers in Karnataka. Health authorities warned all hotel management teams that further strict penal action will follow once official laboratory findings for the 35 collected samples are released.
