Morning commuters and breakfast seekers in Rishikesh, Uttarakhand, are increasingly gathering outside the AIIMS facility around a small food stall known for its distinct Rajwadi breakfast. Operated by vendor Vishnu Sharma for roughly three and a half years, this street cart has carved out a dedicated following by serving flattened rice dishes prepared with a regional twist. The standout appeal of the stall rests entirely on its reliance on homemade spice blends combined with authentic savory namkeen sourced directly from Rajasthan.
Preparation Begins in the Early Hours of the Morning
While the cart opens for customers at 6:00 AM and stays operational until 11:30 AM, the preparation process starts hours before dawn. Sharma begins his day at around 3:00 AM, getting every ingredient washed, chopped, and assembled so that steaming servings can be dished out promptly by 6:00 AM. His consistent punctuality draws early morning joggers, workers heading to work, visitors traveling to the hospital, and local residents who make this quick snack their primary breakfast destination.
Special Homemade Masala and Authentic Savory Toppings
According to Sharma, the core identity of his recipe is driven by his proprietary homemade spice blend. To elevate the texture and taste, he pairs these freshly ground spices with authentic crispy namkeen brought directly from Rajasthan. Every portion is built by garnishing the soft steamed flakes with chopped onions, roasted peanuts, fresh tomatoes, the crisp regional namkeen, and a sprinkle of his special house seasoning. The combination delivers a zesty, layered flavor profile that contrasts noticeably with standard street poha.
Two Serving Sizes Offered at Accessible Price Points
To cater to varying breakfast appetites, the cart serves the dish in two specific portion options. A regular smaller plate is priced at 30 rupees, whereas a larger serving sells for 50 rupees. The balanced combination of pocket-friendly pricing, hearty portion size, and distinct seasoning makes it an accessible morning meal for daily workers and students who need a quick breakfast before starting their shifts.
Loyal Patrons Praise the Unique Texture and Flavor
Among the everyday regulars at the stall is customer Ravi Godara, who notes that he has been stopping by for breakfast for roughly a year and a half. Having tried various breakfast vendors around the locality, Godara considers this stall unmatched, highlighting that the addition of fresh ingredients like pomegranate seeds along with the crisp namkeen adds an extra layer of freshness. Another patron visiting from Rajasthan, Moli Devi, echoed similar praise after tasting the preparation. Despite hailing from the state known for these very snacks, she noted that the distinct Rajwadi balance served at this Rishikesh stall is rare to find even back in Rajasthan.
