Demonstrating how innovative thinking can breathe fresh life into traditional street vending, commerce graduate Pokhan Lal Sahu chose self-employment over corporate jobs by transforming his ancestral food business. Rather than seeking white-collar work after earning his BCom degree, he took over his family trade and converted an old three-wheeler into a fully functional mobile food cart. This practical innovation has enabled him to generate daily revenue exceeding Rs 3000 across multiple local marketplaces.
Modernising a Decade-Old Family Legacy
The street food stall was initially established by Pokhan's father. Roughly 11 years ago, Pokhan formally stepped in to manage the operations and gradually steered the venture using his own independent ideas. Despite having a college education, he consciously stayed away from applying for routine jobs. He envisioned a sustainable future in scaling up what his family had already started, recognizing the commercial potential of street food when executed with discipline and originality.
Modifying an Auto on a Rs 1 Lakh Budget
To distinguish his venture from typical roadside vendors and gain geographical flexibility, Pokhan acquired an older auto. He invested approximately Rs 1 lakh in total, covering both the purchase of the vehicle and its customized modification into a rolling chaat center. This smart setup removed the constraints of a fixed pavement pitch, allowing him to navigate swiftly between busy local commercial centers depending on peak foot traffic.
The Secret Behind the Taste and Operating Hours
A distinctive preparation process sets his offerings apart from ordinary stalls. Pokhan explains that every ingredient utilized in his fried chaat recipe undergoes thorough frying before being assembled into the final dish, delivering a consistent texture and flavour profile that repeat customers appreciate. Alongside fried chaat, he also sells gupchup at reasonable rates. His workday runs consistently on a structured schedule from 12 pm in the afternoon until 7 pm in the evening.
Reaching Multiple Markets with Steady Growth
The versatility of a motorized cart allows Pokhan to cater to four to five neighbouring markets throughout the week. Pocket-friendly pricing combined with strict taste consistency keeps customer demand high. His practical entrepreneurial journey proves that small-scale local enterprises can achieve financial stability when educated youth introduce smart operational upgrades to traditional grassroots trades.
