A steaming hot beverage in the evening often calls for a fresh, crispy snack, and homemade cabbage fritters offer a simple yet delightful option. Homemaker Radhika Prajapati shared that preparing this savoury dish begins with the proper cleaning of a fresh cabbage. Once cleaned, it is cut into thin, long shreds. Alongside the greens, four to five onions are finely sliced, while three to four green chillies are finely chopped to introduce a pleasant touch of heat and enhance the overall taste.
Blending The Base And Traditional Spices
Once the primary chopping is done, assembling the batter mixture begins in a spacious mixing bowl. According to Radhika Prajapati, the shredded cabbage, sliced onions, and chopped green chillies are first combined together so the vegetables distribute evenly. Gram flour is then folded into the vegetables to act as the binding base. For seasoning and colour, salt and turmeric powder are added according to taste, followed by a pinch of cumin powder, black pepper powder, and a small quantity of baking soda to bring a light crispiness to the final texture.
Achieving The Right Batter Consistency
After blending the dry ingredients and vegetables, water is incorporated in small, gradual increments rather than poured all at once. Radhika Prajapati pointed out that one must take care to ensure the batter does not become overly runny or watery. The mixture of cabbage, onions, and gram flour needs to remain sufficiently dense and thick so that small, cohesive portions can be shaped effortlessly by hand and dropped into hot oil without falling apart.
Deep Frying At Moderate Heat
To fry the fritters, cooking oil is heated in a pan until it reaches a medium temperature. When the oil is ready, small portions of the prepared batter are gently dropped into the pan one by one. The fritters are fried steadily over medium heat, which allows them to cook thoroughly on the inside while the outer exterior turns pleasantly crisp and golden. As soon as they take on a rich golden-brown shade with a crunchy surface, they are lifted from the oil and drained. The rest of the batter is fried following the same routine. Served alongside zesty green chutney, tangy tomato dip, or a hot cup of tea, these freshly fried cabbage snacks make for a satisfying teatime treat.
