Checking Cucumber Freshness
You can check the freshness of a cucumber by pressing its ends with your fingernail. If the ends feel very soft or mushy, it means the cucumber might be old. Fresh cucumbers are firm and less likely to be bitter.
The end near the stem can often be the bitterest part. If this section looks pale or discolored, it is better to avoid that cucumber.
