Moong dal halwa holds a very special place among traditional Indian sweets. It is relished especially during winter months, major festivals, and grand wedding celebrations. While its rich taste is universally loved, the preparation process is traditionally considered quite labor-intensive. Fortunately, with a little preparation and the correct roasting technique, you can easily recreate the same rich and delicious sweet in your own kitchen.
Essential Preparation and Ingredients
To begin making this classic dessert, thoroughly wash the yellow lentils and let them soak in water for about 3 to 4 hours. Once the lentils are well soaked, drain away all the excess water completely. Transfer the soaked lentils into a blender and grind them coarsely using little to no water. Keep in mind that the lentil paste should never be completely smooth, as maintaining a slightly grainy texture is crucial to getting the signature mouthfeel of a good halwa.
The Crucial Step of Roasting the Lentils
Place a heavy-bottomed pan on the stove, heat it properly, and add ghee to it. Once the ghee is hot, add the coarsely ground lentils. Cook the mixture on low to medium heat while stirring continuously. This roasting phase is arguably the most important step in crafting an authentic moong dal halwa. Continue roasting the lentils until all the raw aroma disappears and they turn a nice light golden hue. Properly roasted lentils will start releasing ghee around the edges, filling the space with a rich aroma. This entire process can take anywhere from 20 to 30 minutes, so avoid rushing through it.
Adding Milk and Water Safely
In a separate vessel, heat up a mix of milk and water. Slowly pour this warm liquid into the roasted lentils while stirring constantly to prevent lumps. Liquid might splatter when hitting the hot pan, so exercise caution during this step. Cook the lentils until they absorb the liquids thoroughly and the mixture begins to thicken again. At this stage, add sugar and stir it in completely. The addition of sugar will temporarily loosen the consistency, so keep stirring and cooking over heat until the extra moisture evaporates.
Enhancing Flavor with Khoya and Dry Fruits
Now, incorporate the khoya or mawa into the mixture and blend it well. Follow this by adding cardamom powder and saffron. Toss in finely chopped almonds, cashews, and pistachios as well. Allow the halwa to simmer for a few more minutes until the ghee separates along the edges and the dessert reaches your desired thickness.
