How to Make Traditional Mohanthal at Home With This Simple Recipe

Mohanthal is a traditional Gujarati sweet known for its rich texture and ghee aroma. You can easily make this festive delicacy at home by following a few simple steps.

Among traditional sweets, the Gujarati delicacy known as Mohanthal holds a very special place in culinary culture. Its crumbly texture, melt-in-the-mouth quality, and the rich aroma of pure ghee make it an absolute favorite during festive occasions and celebrations. Store-bought sweets often carry the risk of adulteration, which makes homemade preparation a much safer and healthier option. You can easily recreate this magnificent dessert right in your own kitchen by following a straightforward method that guarantees authentic taste and purity.

Essential Ingredients Required

To prepare this delicious sweet, you will need a specific set of pantry staples. The primary ingredient is two cups of coarsely ground gram flour. Additionally, you will need four to five tablespoons of milk for binding, along with a quarter cup of milk to be added while roasting. You also require three-quarters of a cup of desi ghee, one cup of sugar, and half a cup of water. To enhance the flavor and aroma, keep half a small spoon of cardamom powder, a pinch of nutmeg, and some saffron ready. Finely chopped dry fruits like almonds and pistachios are needed for garnishing.

Preparing the Gram Flour Base

The preparation begins by properly conditioning the gram flour. Take the coarse flour in a large mixing vessel and add three to four tablespoons of lukewarm milk along with three tablespoons of melted ghee. Rub the mixture thoroughly between the palms of your hands so that the milk and ghee penetrate every single particle of the flour. Cover this mixture and let it rest for about fifteen minutes. Afterward, pass the flour through a thick sieve. This specific process is crucial because it gives Mohanthal its characteristic granular texture.

The Art of Slow Roasting

Next, heat the remaining ghee in a heavy-bottomed pan and add the prepared flour into it. Keep the flame completely low throughout this entire stage and stir continuously to prevent burning. As the flour continues to roast, its color will gradually turn golden and a rich, earthy aroma will fill the entire space. Once the flour turns light brown, slowly add a quarter cup of milk in small increments. The moment the milk hits the hot mixture, it will create foam and cause the flour to expand. Stir constantly until the milk is completely absorbed. This step imparts a mawa-like softness and rich flavor to the base, after which the heat should be turned off.

Making Sugar Syrup and Setting

In a separate vessel, combine the sugar and water, placing it over medium heat to cook. The objective is to achieve a syrup of approximately one and a half thread consistency. Once the syrup reaches the right stage, blend in the saffron, cardamom powder, and nutmeg, then turn off the stove. Gradually pour this hot syrup into the roasted flour mixture and mix everything thoroughly. Grease a plate or tray lightly with ghee and spread the mixture evenly over it. Sprinkle the chopped almonds and pistachios on top, pressing them down gently. Once it cools completely, slice it into neat pieces and enjoy the treat.
