In the culinary traditions of Ranchi, a traditional preparation known as Baingan Thadua holds a revered place among festive home-cooked meals. The defining feature of this regional specialty lies in its use of small, slender eggplants that remain completely intact along with their green stems, without being chopped into smaller pieces. Due to its distinct texture and rich aromatic spices, locals often regard it as a royal vegetable dish worthy of celebrations. Selecting the Vegetables and Preparing the Marinade

Each small, thin eggplant is sliced down the center just enough to verify that it is completely fresh and free from decay or insects inside. Great care must be taken to keep the stem intact so the vegetable retains its whole shape throughout the cooking process. Once inspected, the eggplants undergo a thorough dry marination. The spice blend for this coating includes turmeric, coriander powder, cumin powder, black pepper powder, and a small quantity of ground fried masala. This fragrant mixture is rubbed generously across the surface and into the inner slit of every eggplant. To ensure that the spices penetrate deep into the flesh, the seasoned vegetables must rest undisturbed for at least half an hour.
Crafting the Aromatic Mustard Oil Gravy
