Step-by-Step Preparation

First Step: Start by soaking the chickpeas in clean water overnight. The next morning, add half a teaspoon of baking soda to the chickpeas and pressure cook them for 5 to 6 whistles. This simple trick makes the skins float to the surface, which you can then easily remove. Drain the water after removing the skins.

Add 3 to 4 garlic cloves, half a teaspoon of cumin powder, half a teaspoon of black pepper powder, the juice of one lemon, 3 tablespoons of olive oil, and 3 tablespoons of tahini (or yogurt). Add salt according to your preference. The lemon juice adds a wonderful tang and enhances the overall flavor profile of the dish.

Third Step: To achieve that signature creamy texture, add 3 to 4 ice cubes while grinding the mixture. If the consistency seems too thick, use some of the reserved water from the boiled chickpeas. This process is key to ensuring your hummus becomes perfectly smooth and velvety. Blend well and check to see if you have reached the desired creamy consistency.

Fourth Step: Scoop the prepared hummus into a serving bowl. Use a spoon to create a small well in the center and pour 1 to 2 tablespoons of olive oil over the top. For a finishing touch, sprinkle some red chili powder or mixed herbs. Finally, garnish with fresh parsley leaves or chopped cilantro. Your delicious homemade hummus is now ready to serve. Pair it with biscuits, pita chips, or raw sliced vegetables like carrots, cucumbers, broccoli, and zucchini. It also goes perfectly with falafel, pita bread, or even spread over regular bread or roti.
