Have you ever tasted the famous Maddur Vada from Karnataka? This delightful snack, made from a combination of onions, rice flour, and semolina, offers an incredible taste that is hard to resist. Being crunchy on the outside and soft on the inside, it serves as a wonderful pairing for your evening tea. You can easily whip up this delicacy right in your own kitchen.
Essential Ingredients for Maddur Vada
To prepare this tasty snack, you will need a specific set of ingredients. The list includes four onions, salt according to taste, oil for frying, 5 to 6 curry leaves, 2 tablespoons of cashews, 2 tablespoons of almonds, half a tablespoon of white sesame seeds, half a tablespoon of poppy seeds, 1 teaspoon of cumin seeds, and 2 to 3 green chilies. Additionally, you will need 2 tablespoons of upma rava, half a cup of all-purpose flour, half a cup of rice flour, half a teaspoon of black pepper, and 2 to 3 tablespoons of hot oil.
Step-by-Step Method to Prepare the Mixture
To begin making this recipe, first cut the onions in half and slice them thinly. Ensure that the layers of the onion separate as you chop them. Place the sliced onions into a large bowl, add salt, and gently rub them with your hands. Adding salt will cause the onions to release their moisture. After a little while, discard the salty water that comes out of the onions.
Next, add the fried curry leaves, finely chopped cashews, almonds, white sesame seeds, poppy seeds, cumin seeds, chopped green chilies, and upma rava into the same bowl, and mix everything thoroughly. The semolina will absorb any remaining moisture from the onions. Following that, incorporate the all-purpose flour, rice flour, salt, crushed black pepper, and 2 to 3 tablespoons of hot oil into the bowl, blending all the components together. Keep kneading the mixture gently with your hands until it comes together like a dough. Remember that you do not need to use any water for kneading this dough.
Shaping and Frying the Vadas
Once the dough is ready, take small portions of the mixture and roll them into balls. When all the balls are prepared, place them one by one between your palms and flatten them gently. Drop these flattened vadas into hot oil and fry them until they turn a beautiful golden brown color. Your piping hot, crispy vadas are now ready to serve. Pair them with fresh coconut chutney to enjoy the best flavor.
