A sweet prepared with ripe bananas, jaggery, and wheat flour provides a flavorful, wholesome option that comes together with minimal kitchen effort. Instead of discarding surplus ripe bananas, households can repurpose them into a rich, aromatic burfi that pairs naturally with celebrations, family gatherings, and hosting guests.
Essential Ingredients and Preliminary Prep
Preparing this traditional sweet requires basic pantry staples: ripe bananas, jaggery, clarified butter, and whole wheat flour. Cardamom powder is additionally included to elevate the fragrance and overall depth of flavor. The preparation begins by measuring out one cup of jaggery into a bowl. Add a small measure of water and stir thoroughly until the jaggery dissolves completely into a smooth, thin liquid.
Next, peel the ripe bananas and chop them into smaller rounds. Transfer the banana pieces into a mixer grinder and blend until the fruit breaks down into a smooth, velvety puree without any lumps. Ensuring an even consistency at this stage helps the fruit blend seamlessly with the flour during the roasting process.
Roasting the Flour and Combining the Puree
Set a heavy-bottomed pan or wok over medium heat and melt a generous measure of clarified butter. Add the wheat flour into the melted butter and reduce the flame to low. Roast the flour gently, stirring continuously to prevent scorching, until it turns golden brown and releases an earthy, nutty aroma.
