Preparing the Baatis
Begin by taking a spacious mixing bowl and combining wheat flour, semolina, carom seeds, salt, and ghee thoroughly. Gradually add water to knead a firm dough, then cover it and let it rest for 15 to 20 minutes. Once rested, portion the dough into medium-sized round balls to form the baatis. Preheat your oven to 180 degrees Celsius and bake the baatis for about 25 to 30 minutes until they turn a beautiful golden brown. For those without an oven, a gas tandoor or a heavy-bottomed pan works just as well for cooking them evenly. After baking, gently press the hot baatis and drizzle them generously with ghee or dip them entirely in melted ghee before taking them out.
Cooking the Panchmel Dal
Start the dal preparation by washing all the lentils thoroughly and soaking them in water for approximately 30 minutes. Transfer the soaked lentils into a pressure cooker along with turmeric and adequate water, then cook for 3 to 4 whistles. Heat some ghee in a separate pan, add cumin seeds, and sauté finely chopped onions until they turn golden. Stir in the ginger-garlic paste for a few seconds before adding chopped tomatoes and the required spices, cooking the mixture until it blends smoothly. Once the masala starts releasing oil, mix in the boiled lentils, adjust the water consistency as needed, and let it simmer for 5 to 7 minutes.
