The signature seasoning relies on one-third cup of black sesame seeds, five whole dried red chillies, and one teaspoon of whole black peppercorns.
For the tempering and finishing touches, gather four tablespoons of pure mustard oil, half a teaspoon of fenugreek seeds, half a teaspoon of grated fresh ginger, and three finely chopped green chillies. Complete the flavour profile with half a teaspoon of turmeric powder, salt to taste, half a cup of freshly chopped coriander leaves, and one tablespoon of freshly squeezed lemon juice.
