Located roughly 20 kilometers away from the Mau headquarters, Ravindra Sweet House in the Ranipur market has been producing this traditional sweet for nearly 20 years. According to shopkeeper Ravindra, patrons travel from far and wide specifically to taste this specialty. Beyond local buyers in Mau, individuals from various other cities frequently place orders for the sweet. Furthermore, travelers heading abroad often place advance orders, having the Balushai specially packed to take along with them on their international journeys. Because of its impressive shelf life and consistent taste profile, demand for this sweet remains remarkably steady year-round.
The meticulous preparation of Balushai begins with refined flour as the primary base ingredient. Ghee and a controlled amount of baking soda are thoroughly mixed into the flour and kneaded into a smooth dough. This prepared dough is then left to rest for a specific duration, allowing the mixture to settle properly. Afterward, portions of the dough are divided into small pieces and shaped into traditional round forms. These shaped pieces are fried slowly over low to medium heat. Frying the Balushai on a gentle flame rather than high heat ensures that the outer layer achieves a desirable crispness while the inside retains its soft texture.
Once the pieces are fried to perfection, a sugar syrup is prepared using water and sugar, boiled until it attains the ideal consistency.
