Sweet lovers looking to switch things up from market-bought sweets can easily create a delightful treat right in their own kitchens. If standard confectioneries have become monotonous, homemade coconut burfi presents a refreshing, flavorful option that appeals to children and adults alike. Chef Devashish from Bokaro has explained a straightforward culinary approach to whipping up this rich sweet using very few everyday ingredients.
Required Ingredients for the Sweet
Crafting this confection does not demand a long grocery list. The primary requirements include half a litre of milk, 100 grams of coconut powder, 250 grams of sugar, and an adequate quantity of ghee or fresh cream according to preference. In addition to these staples, milk powder can be incorporated to enhance texture and taste, while dry fruits serve as an optional garnish.
Simmering the Mixture to the Right Consistency
The preparation begins by pouring half a litre of milk into a deep pan or kadhai and bringing it to a proper boil over the stove. Once the milk starts boiling vigorously, 100 grams of coconut powder is introduced into the liquid. Following this step, 250 grams of sugar along with ghee or fresh cream are incorporated into the cooking milk.
Stirring continuously during this stage remains critical. Continuous stirring prevents the mixture from sticking to the surface or scorching along the edges of the pan. As the moisture reduces gradually, the blend of coconut and milk thickens steadily until it forms a cohesive base. As soon as it reaches this dense texture, the stove should be turned off immediately.
Setting, Slicing, and Garnishing
Once the base is ready, take a flat plate or baking tray and apply a gentle coat of ghee or refined oil across the surface. Greasing ensures that the mixture does not adhere to the base when set and releases clean slices later. The thickened coconut mixture is then poured out and leveled evenly across the greased tray. Cooks desiring a firmer burfi can also add a small touch of milk powder earlier during the cooking process.
Allow the spread mixture to cool completely until it firms up and sets into place. Once the burfi has hardened sufficiently, slice it into preferred geometric shapes using a knife. Leaving the cut pieces under a fan for a brief period helps them settle firmly. Finally, garnish the top with chopped dry fruits of choice to finish off this homemade, cost-effective sweet.
